Pig’s large intestine with ginger slices is Hakka people’s representative dish. Large intestine tastes crispy, pleasant, light and fresh. So this dish is busy modern people’s finest snack.
Ingredients: half catty of pig’s large intestine, 4 taels of young ginger.
Seasoning: 1/2 spoon of salt, a little vinegar extract, a little soy sauce, 1/2 spoon of sugar, a little wine
Process:
(1) Turn the large intestine over and cut off its superfluous fat and stuff. Use flour and salt to rub and clean it many times. Strain its liquid out and cut it into sections. Cut the young ginger into slices.
(2) When the oil is heated very hot, put ginger slices into the oil and stir-fry them. Add the large intestine sections and fry them. Add all the prepared seasonings and fry them. Then you may taste soon after removing the dish from the pan.
